Good point! My biggest problem with French Toast is that the bread doesn't always stick around my pantry long enough to age. I try to buy loaves on Wednesdays, but usually end up making garlic bread and being out by the weekend.
One of the best things about it though is that non-vegan guests are amazed by it because it seems super complicated and un-veganizable. But it's untrue! I learned this thanks to Vegan with a Vengeance. Actually, my first vegan French toast was the Pumpkin French Toast from Vegan Brunch. (Let me tell you, this books is worth having). It was a little more involved that the VwaV French Toast, but just a little, and definitely worth it.
But the VwaV French Toast is perfect for the weekend mornings when you actually have not-too-fresh bread, even if you're feeling a little lazy. It's as easy as pancakes.

I've never tried it, but apparently you can lightly toast your bread to simulate that barely-stale texture that makes French toast so delicious! I loooove the VwaV recipe.
